½ cup grass-fed butter
¾ cup coconut palm sugar
4 tablespoons honey
2 large eggs
2 teaspoons vanilla
1½ cups blanched almond flour
1 ½ cups gluten-free oat flour
3 tablespoons coconut flour
¼ cup gluten-free rolled oats (optional)
1 teaspoon baking soda
1 teaspoon sea salt
1 cup dark chocolate pieces or dark chocolate chips


Preheat oven to 350 degrees F.
In mixer, cream the butter, coconut sugar, honey, egg, and vanilla for about 15 seconds until smooth and fluffy.
Add the almond flour, coconut flour, oat flour, oats, baking soda and sea salt and mix again until combined, about 30 seconds.
Stir in the chocolate chips by hand.
Bake for 9-12 minutes, until slightly golden around the edges.
