Monday mornings can be so overwhelming with the rat race of getting the kids dressed and ready for school, or scrambing out the door to the office. I love making up some breakfast options on Sunday during my ‘meal prep’ time for the week. Check out this new recipe I was playing with yesterday! It’s delicious and very much kid approved!!!

1 can full cream coconut milk
1-2 Tablespoons Great Lakes Gelatin
1/2 cup raw cacao powder
4 medjool dates
1/2 tsp pink salt
1 tsp vanilla bean paste or vanilla extract
1/2 tsp cinnamon
1 scoop protein powder (unflavored, optional)

Blend in vitamix and pour into glass jars and let set in fridge overnight.
