Prep time: 20 minutes. Cook time: 15 minutes

1 pastured egg
1/4 cup coconut flour
1/4 cup almond flour
2 cups shredded coconut (unsweetened)
24 large shrimp (deveined)
1/2 cup coconut oil
1 handful cilantro
2 limes sliced into wedges
salt and pepper to taste

Directions: Devein shrimp, rinse, dry and set aside. In a medium sized skillet melt coconut oil until hot. Prepare one small bowl with egg, and one small bowl with coconut and coconut flour. Dip shrimp one at a time in the egg first, then the coconut mixture. Fry in coconut oil until golden brown (about 5 minutes each side). Serve with chopped cilantro and lime juice. Enjoy
