Prep time: 10 minutes (if you have quinoa and chicken on hand) Otherwise prep time 30 minutes.

1 cup quinoa, cooked
½ cup chicken, cooked or grilled
½ cucumber, chopped
½ bell pepper, chopped
Handful of cherry tomatoes
Handful of basil, sliced
Any other garden veggies would be delicious to add in as well


2 oz orange juice
1 T lime juice
1 oz olive oil
1 tsp maple syrup
Salt and pepper to taste
