I am always looking for heathy-ish desserts to serve at dinner parties. I created this one last week and it has quickly moved to the top of my favorites list! It is super easy to make, and oh so rich and amazing. Perfect for an upcoming holiday party!

 

 

Makes one 9-inch pie, 6 to 8 servings

Crust:
1 cup pecans (ground)
4 medjool dates
1/2 c raw cacao powder
1 tsp vanilla
1 pinch sea salt

Mousse:
1 and 1/2 cups cashew pieces (soaked 15 minutes in hot water)
1/2 cup hazelnuts (soaked with cashews)
1/2 cup maple syrup
1/2 c water
3/4 c raw cacao powder

Directions:
Crust
Pulse all ingredients in a vitamix or a food processor until smooth. Press into a 9’’ pie pan. You can also use small glass serving bowls.

Mousse:
Rinse and soak cashews and hazelnuts. Soak for at least 15 minutes in hot water. Add all ingredients to a high powered blender such as a vitamix or blendtec. Blend on high until very smooth. Pour mousse into crust. Chill for 1 hour.

Optional: Serve with raw whipped cream, and raspberries.
