This is a super easy breakfast to meal prep for the week.
2 T avocado oil
2 leaves kale, destemmed and chopped
1/4 cup onions, chopped
1/2 bell pepper, chopped
1/4 cup black beans, rinsed
2 T salsa
salt and pepper to taste
Saute kale, onions, bell pepper and black beans in oil until kale is tender and slightly crisp. Crack two eggs into pan and mix well. Top with avocado and salsa.
For meal prep: Chop enough veggies for 4-5 servings. Make several different containers of the chopped kale, onion, bell pepper and black beans together. Store in the fridge and each morning simple saute veggies, and add egg.
