Serves 8 people

2 cups quinoa, cooked
1 butternut squash, peeled and chopped
1 bundle asparagus, chopped
1 parsnip, peeled and chopped
2 large carrots, peeled and chopped
1 sweet potato, peeled and chopped
1 red onion, chopped
2 Tbsp olive oil
1 tsp kosher salt
1/2 tsp dried thyme
1/4 tsp ground black pepper

1 Dressing:
3 Tbsp olive oil
3 Tbsp balsamic vinegar
1/2 tsp Dijon mustard
1/2 tsp fresh thyme leaves, minced
1 cloves pan roasted garlic (recipe follows)
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper

Roast vegetables above for 30 minutes or until golden brown. Combine all ingredients together and enjoy!
