I’m slightly obsessed with the Hail Merry’s chocolate tarts and their coconut bites. I have been playing with recipes for a few weeks and finally landed on this one!
2 cup grated unsweetened coconut
1/2 cup coconut oil, melted
5 Tablespoons raw cocoa powder
1/4 cup organic grade B maple syrup
1/2 teaspoon vanilla extract or vanilla bean paste
1/4 teaspoon pink salt
In a saucepan, warm up coconut oil. Stir in all other ingredients until mixed well. Slowly pour in coconut oil. Set aside for 15-20 minutes until mixture firms up. Then roll into shapes or balls. Keep refrigerated. YUM!!!
