Superfood Salad (with hemp seed and goji berry)

1 head butter lettuce, torn into bite size pieces
1/2 bulb fennel, sliced thin
2 T goji berries
2 T hemp seeds
1-2 T raw goat cheese
1/2 green apple, sliced thin

1 part maple syrup
1 part basalmic
2 parts olive oil

Toss ingredients together and enjoy!

Fresh Tuna Salad
2 cans Wild tuna
½ cup Green apple chopped
½ cup Celery chopped
¼ cup Olive oil
1 tsp Sea salt
Juice from 1 lemon
1/4 c pecans, chopped
1 T basil, chopped
Fresh ground pepper to taste

Mix all ingredients together and enjoy!


Idaho Broccoli Salad

2 cups broccoli heads, chopped
1 cup organic peas
5 strips of bacon, cooked crispy and chopped
1/4 c pine nuts
1/4 red onion, chopped
2 T Apple Cider Vinegar
2 T Coconut Sugar (or 1 T xylitol)
1 t salt
1 cup Simple Homemade Mayo (see Mayo recipe under dressing/sauces)

Mix all ingredients and enjoy.

Vietnamese Chicken and Cabbage salad

1 ½ T lime juice
1 T avocado oil nut oil
1 T tahini
1 green onion
2 c shredded red cabbage
4 c baby arugula
½ medium cucumber peeled and sliced thin
1 carrot shredded
2 T slow roasted cashews, chopped
2 T chopped basil
8 oz cooked chicken breast

Combine lime juice, oil, tahini, onion in small bowl to make dressing

Combine remaining ingredients and toss into a salad and enjoy!


Kale Spinach Superfood Salad
1 bunch Kale, destem
1 bunch spinach
½ c cherry tomatos, quartered
1/2 cup goji berries
3 T hemp seeds
Cashew Basil Dressing

Kale Quinoa Salad
1 bunch raw kale, chopped fine
1 lemon, juiced
1/4 red onion, minced
1 handful cherry tomatoes, cut in half
1/2 c cucumber, chopped
1 cups cooked quinoa
1/4 cup extra virgin olive oil
Ground pepper and Himalayan pink salt to taste
1/2 avocado sliced

Remove stems from kale and chop kale ultra fine. Massage and toss kale with olive juice.. Add onions, salt and pepper and toss with olive oil. Allow quinoa to cool and mix into salad. Slice avocado and add on top.

Leafy Greens with Garbanzos

1 Garbanzo beans (or black or white beans)
1T apple cider vinegar
1T olive oil
1 Salt/pepper
1 Chopped carrots/celery

Mix together and serve over:
Fresh spinach/kale. Season greens with lemon pepper and salt. You can serve with a side of brown rice pasta.

Spinach Salad

1 large bag of organic spinach
1 pear, peeled, and sliced thin (optional)
2 teaspoons ghee
2 shallots, minced
½ cup organic apple juice
2 teaspoons organic apple cider vinegar
1 teaspoon dijon mustard
1 6-ounce bag organic baby spinach
Raw goat cheese (about 1/4 cup)
Salt and pepper to taste

*Candied Pecans:
1/2 c pecans
1 T ghee
1 T coconut sugar

Heat medium skillet with ghee. Add shallot, salt, and pepper. Stir in apple juice, cider vinegar, and mustard. Simmer for 3-4 minutes or until slightly reduced. Add in 1/2 of the spinach and wilt for about 2 minutes. Mix the two batches of spinach in large bowl. To candy pecans mix with 1 T ghee and 1 T coconut sugar. Heat until crunchy. Arrange goat cheese, pears, and pecans on top.

Seaweed Salad Recipe

1 Seaweed Salad Recipe
1/2 Cup dried arame seaweed (soak seaweed in warm water to cover for 15 minutes, drain and chop)
1 c shredded red cabbage
1 c shredded carrots
1 c diced fresh mushrooms
1 tsp grated fresh ginger
2 Tbsp tamari
1 Ttoasted sesame oil
1 sesame seeds for garnish

In a large bowl, combine all the salad recipe ingredients (reserving the sesame seeds for garnish)
and toss well to coat. Allow the seaweed salad to marinate for at least an hour so the seaweed and the vegetables absorb the ginger, tamari and oil.

Green Salad with Feta and Corn

1 Small head of butter lettuce
1 cup cherry tomatoes, halved
1 packaged chopped raw goat feta
1lb package organic bacon
1 cucumber, chopped
1 corn on the cob, sliced of the cob
1 large carrots, chopped
basil (optional)

Fresh, Fruity Summer Salad

1/2 c arugula
1/2 c romaine lettuce, chopped
1/4 c goat cheese
1/4 c blueberries
1 apricot, sliced
1/4 avocado, sliced
1 T pine nuts
1 T sesame seeds
1-2 T Everyday Homemade Dressing

Toss and enjoy!
