3 stocks celery, sliced
1 apple, chopped. (I like granny smith or pink lady)
¼ cup red onion, sliced
1 tsp dijon mustard
1-2 TBS lemon juice
1-2 TSB mayonnaise, sour cream, or ranch dressing. * I love Tessemae’s organic creamy ranch
For a dairy-free option, try an avocado mayo or a wayfare dairy-free sour cream.
Salt and Pepper, to taste

Mix all ingredients and enjoy! I love to serve over mixed greens, or in a collard green to make a wrap.
