2 lbs ground organic chicken
¼ c chopped cilantro
1 handful chopped mint
1 handful chopped chives
½ tsp pink salt
½ tsp garlic salt
2 cloves garlic, minced
1 tsp fresh ginger, minced
½ tsp fresh lemon grass, minced
1 lime, zested
1 lime, juiced
1 T red curry paste
1 T olive oil
1 can full fat organic coconut milk
½ cup organic chicken bone broth.
Combine all ingredients except the coconut milk and bone broth in a bowl and mix well. Roll mixture into meatballs and set aside. It helps to have wet hands when making the balls to prevent mixture from sticking.
In a large sauce pan bring coconut milk and broth to a simmer. Option to add in some extra curry paste, minced ginger and minced garlic. Add meatballs to coconut milk mixture and simmer on low for 30-35 minutes until cooked.
Serve over rice and rice noodles and enjoy!
