Toddler Veggie Cakes that your kids will LOVE!

Cook Time: 20 minutes
Makes: 10-15 cakes
Ingredients:
3 large handfuls of collard greens, kale, or spinach chopped fine
½ onion
½ bell pepper
1 small bunch parsley
1 package organic hashbrowns
1 lb grass-fed ground beef
2 T almond flour
2 T gluten-free flour (optional)
3 eggs
½ tsp dried thyme
3-4 T coconut oil (for frying)
2 T Nutritional Yeast
2 T grass fed butter
2 cloves garlic
Salt and pepper to taste
Directions:
Blend onion, bell pepper and garlic into a puree. In heated pan, add butter and saute pureed mixture. Add beef and cook until browned. Pour beef and veggie mixture over hash browns. Stir in remaining ingredients except for the coconut oil. Mold mixture into patties to be fried. In heated pan, add coconut oil and fry patties until golden brown. Serve with your favorite condiments and enjoy!
Note: This recipe can be a template for any veggie. I used collard greens, but broccoli, kale or any other green veggie would be delicious!
