3 tablespoons coconut oil
1/4 cup quick oats
2 tablespoons chopped pecans or almonds *optional
3 tablespoons organic gluten free flour (divided)
3 tablespoons coconut sugar (divided)
1 tsp teaspoon cinnamon (divided)
½ tsp nutmeg (divided)
1/8 teaspoon salt
2-3 apples (about 2 cups chopped)
honey for drizzling
Melt the coconut oil. Stir in the oats, 2 tablespoons of the gf flour, 2 tablespoons of the coconut sugar sugar, 1/2 teaspoon of the cinnamon, and the salt. Mix until well combined.
Chop the apples and toss them with 1 tablespoon of the gf flour, 1 tablespoon of the coconut sugar, and ½ teaspoon cinnamon.
Layer the apples with the oats mixture in a 9×9 pan. Top with the remaining oat mixture over the top. Bake at 350 for 20 minutes until warm and crisp. Remove and let stand until cool enough to eat. Drizzle with honey for an extra gooey kind of texture. Yum!
