Sesame Seed Protein Balls

If you’re looking for a **deeply nourishing, grab-and-go snack** made from real ingredients, these chewy sesame seed bars are one of my favorites. They’re naturally sweetened, rich in healthy fats, and packed with protein from a beautiful mix of nuts and seeds—no refined sugar, no soy, and no coconut.

They feel like a treat, but truly function as **fuel**—perfect for busy mornings, post-yoga, or something grounding in the afternoon.

Ingredients

* ½ cup peanut butter (creamy or chunky)
* ⅓ cup honey
* ½ cup sesame seeds (toasted for best flavor)
* ⅓ cup pumpkin seeds (raw or lightly toasted)
* ¼ cup cashews, chopped
* ¼ cup almonds, chopped
* ¼ cup pistachios, chopped
* 2 tablespoons hemp seeds
* ¼ teaspoon sea salt

Instructions

  • Toast the seeds & nuts
    In a large dry skillet over medium-low heat, toast the sesame seeds, pumpkin seeds, and chopped cashews until fragrant and lightly golden. I like the sesame seeds really toasty—you’ll smell that deep, nutty aroma when they’re just right. Stir often so nothing burns.
  • Melt everything together
    While the seeds are still warm in the pan, add the peanut butter and honey directly in. Stir continuously until the heat from the seeds gently melts everything into a smooth, sticky mixture that coats all the ingredients. Add remaining ingredients and mix together
  • Press into pan or roll into balls.
    Line an 8×8-inch pan with parchment paper. Press the mixture firmly into the pan using a spatula or the back of a spoon. If rolling into balls, keep your hands slightly wet with water while rolling to prevent sticking.
  • Chill
    Refrigerate for 1–2 hours until fully set.
  • Store
    Keep in an airtight container in the fridge for up to 7 days, or freeze for longer storage.
